Welcome to the group. I've had my 2005 ST3 since new and have done all the valve work since the first one. It now has about 45,000 miles so I've checked it just about every year. Having both a factory and Desmotimes manuals is useful. The Desmotimes has better overall explanations of the process, but the factory has all the torque specs and pretty good pics of the components.

If all you need to do is check the clearances, the process isn't too complicated. The bodywork needs to come off along with the valve covers. Pull one plug from each cylinder (the left ones are easiest). Find top dead center for a cylinder and measure the clearances. Turn the engine to TDC for the other cylinder and measure. Record all your measurements and calculate what shims are needed (there are some spreadsheets around that can help with that). I've tried to keep this short so this is just an overview. Once you're ready to change shims there are other things that need to be done to actually complete that work. Feel free to drop me an email if you need some long distance help.
