Mototouring is based in Northeast Milan, about a 2-3 hour ride from Bologna.
Ducati Tours is based in Lucca, about 1 hour West of Florence, and is also known as "Redbikes".
I've rented several times from Mototouring, and have frequently arranged multiple bikes when I've brought a number of friends along. They have mostly BMW's, though they have a few aging Ducatis. They're primarily a tour operator who also rents bikes.
The last time I was in the Florence/Lucca area, I made a point of dropping in to see the Ducati Tours operation. They are also primarily In the business of setting up tours, but if they have a bike that isn't being used for a tour, they will arrange a rental.
Depending where you are flying into and out of Italy, one of these should work for you.
