As a rider of an '05 ST3 (and also a HD Softail Deluxe -- my Duc dealer says it's amazing how many of his clients ride both brands), I can give you a little input on your questions:
2. Mirrors are always (well, historically, anyway) a joke on Ducatis. They seem to be saying, "If you ride properly -- ie. fast enough -- do you really CARE what's behind you??"
3. Everyone has the same experience the first time they work with the body panels. You'll figure out the wellnuts and get used to them in time. Each time working with the fairing pieces will get easier. Yes, you can change to Dzuz fasteners, as is discussed here from time to time. Or not. For me, it's not a big deal.
5. Definitely do the pipes. I've got Fast by Ferracci and am very happy with them.
