Mike,

Either a bad sender or the thermostat is faulty, not opening all the way. 

You can ohm the sender. Cold she should read about , dang, not near my notes.  IIRC it's about 10 ohms and should incrementally decrease as temp goes up.

Also, If you can swap the connectors, the FI sender is the same.  Warm her up, swap connectors and see if it reads normal, but to do all this you gotta remove the side fairing.

Test first with your thermometer, and then pressure test the cap, should be about 1 BAR or 15 psi or so, that's easy, if you have the pressure tester.  Your local Ducati, or auto parts shop should test it for you.

Good idea, Nick. I'll borrow my IR thermometer from work tonight and
verify the gauge is reading the correct coolant temp. I'll be able to
go at as high as I can keep the cap off, after that I will only be able
to read the surface of the radiator.
