Sorry to hear of the problems, Ian. You might do better with ProGrip 714 Enduro grips, which are much more comfortable than the OEM ones, or any others I've used. Not having seen the Grip Puppies, I'd be suspicious of wide-diameter squashy over-grips that could stretch your hand open yet require a firm hold for control. The 714s are the business; hand-friendly and grippy and just the right shape and size.

As to lever angle; I always set mine at just above a straight line from arm through to fingertips, with your palm on the grips. That way, as you apply pressure, they align in a straight pull for the tendons in your wrist.

Your comments on the Elefant being better suggest your problem might be more to do with posture and loading on your hands, with the resultant vibration of road shocks being fed into your sensitive wrists. You'd need to raise the 'bars on the ST a lot to reduce that.
