We need diagrams here! Do you mean she stabs her foot across the pillion, hitting it on the way, rather than swinging her leg over the back? Presumably this is either a) there's a top-box in the way or b) she doesn't have good hip movement. I guess she feels more stable starting from terra firma than balancing on a peg-and-a-shoulder...
Solo riding is the best option IMO, maybe with a coms system!
